Now to my context and question:
I’m a photographer with a massive archive of images that I’ve been keeping as a JBOD setup on an older Synology DS918+ and have been backing up to Backblaze B2. However, the monthly B2 charge has gotten mighty expensive, so I’ve now purchased a second, newer NAS (DS923+), and I plan to keep 2x20TB drives in that NAS (with room to grow), and another set of 2x20TB drives in the old NAS.
The old NAS has 3x10TB drives with the JBOD setup, and is currently using ~11 TB of space.
What would be the best way to migrate my entire archive on the old NAS into an SHR setup on the new NAS, while also setting up the old NAS (and possibly the old drives) as a second onsite backup?
I wasn’t sure how to move that content without also copying over the original JBOD system… which I don’t want to do. I’d rather start fresh with the SHR setup.

There are several ways to bring over the data (achieve of images) from one NAS to another. The underlying disk configuration, aka JBOD or SHR, is not transferred. You create a storage pool as SHR on the new NAS, create a volume on top of that pool, and transfer the data. Once the transfer has finished, you can optionally recreate the storage pool on the old NAS and change it to SHR if you like. Last, you back up from the new to the old NAS. So far, for the overall process.
There are several ways to transfer the data.
-Sync with Shared Folder Sync (essential feature, one-way sync, would do the trick)
-Sync with Synology Drive ShareSync (more advanced, two-way sync possible)
-Restore from backup (since the backup is online, this is a time-consuming option)
-Copy via Mount Remote Folder in File Station (fully manual process)

As far as transferring data goes, are the options you presented different from the migration assistant Will talks about in this video?
My end goal is to just make the transfer process as simple as possible. The first option you presented seems like that would work for my needs. Either that or the last option.
The option of Migration Assistant is also a great option that I did not mention. I was afraid the storage pool type was transferred but that does not seem to be the case.
So yes, Migration Assistant, as mentioned by Will in his video, is a viable option.
